The part of the artichoke we eat is actually an immature flower head. Before it opens, its numerous bracts—the thick leaves that form the “artichoke”—remain closed and protect the small flowers inside.
If left to grow, the flower head eventually opens, revealing numerous bluish-violet flowers. Therefore, the artichoke that reaches our table is actually a flower harvested before it has fully developed.
