 The fonoll marí (Crithmum maritimum), known in Spanish as hinojo marino, grows on the rocky coasts of Mallorca, where it withstands the sun, wind and sea salt.
 
 
 Traditionally, its leaves and tender stems have been harvested for preservation, especially in brine or vinegar. This method of preparation allowed the plant to be available for longer and imparted a characteristic salty, fresh, and slightly acidic flavor to the table.
